Quick and easy:
Veggie and Chicken tortilla pizza!!
Makes 4 servings
4 whole wheat tortillas (7 to 8 inch)
1 cup Pizza sauce
Bunch of fresh spinach
2 cups fresh white mushrooms, sliced thin
2 Roma tomatoes, sliced thin
1/2 zucchini, sliced thin
1 cup cooked chicken chopped
1 tsp. minced garlic
1/2 tsp. dried minced onions
Dry parsley flakes
1/2 tsp. garlic salt
1/2 Parmesan/Romano grated cheese
1 cup finely grated low-fat Mozzarella cheese
Preheat oven 375
Place tortillas on a baking sheet. Divide all ingredients above by 4.
Cover each tortilla with 1/4 cup pizza sauce and spread to edges.
Break stems off spinach leaves, and layer over tortillas. Next add
mushrooms sliced thin, also tomatoes, and zucchini. Next is the chicken.
Sprinkle the minced garlic, and all other spices lightly over each pizza.
Then a light layer of Parmesan/Romano cheese, and then the
Bake for 15 to 17 minutes. Enjoy!!
