Zucchini Noodles – best recipe

Zucchini Noodles:

Pesto Pasta


1 lb. noodles made from zucchini noodles (I bought the Veggetti from Wal Mart in the as seen on tv section)
3/4 cup fresh basil leaves
1/4 cup pine nuts
1 clove garlic,
1 tbsp grated parmesan cheese (I used fresh)
1/4 cup olive oil
salt and pepper to taste.


Add the basil leaves, pine nuts, peeled garlic, and grated parmesan to a food processor and blend together. Slowly pour the olive oil in while mixing. Stir in the salt and pepper.

Heat some olive oil in a pan on medium heat for 3 minutes, then add your basil mixture, and cook for 3 more minutes. Serve with extra pine nuts and parmesan cheese sprinkled on top. Or you could serve over cold noodles.

I just used 3 zucchinis, and added some of the basil mixture to my liking. Enjoy
